Need a good hit of veg and feeling uninspired? Then you must try this incredible soup recipe created by my wonderful Step Dad. Not only will the vibrant colour from the squash and carrots brighten up any day, but it’s packed full of flavour and goodness. So have a go and let me know if you like!
Butternut Squash and Chorizo Soup
1 packet smoked lardons (bacon)
8-10cm peeled and chopped chorizo
1 onion, chopped
3 cloves of garlic, chopped
1 tin chopped tomatoes
4-5 peeled and chopped carrots
1.5 litres chicken stock
Fry the bacon over a gentle heat, then add the onions, chorizo and garlic until the onions are slightly caramelised.
Add the tin of tomatoes, stock, carrots and butternut squash, and cook for around 20 minutes, or until the veg is soft.
Blitz everything together until very smooth, serve and enjoy!
The great thing here is the need for very little seasoning, as the chorizo and stock provide all the saltiness you need. Perfect!
