Chocolate and Cranberry Energy Ball | Healthy Recipes

I’ve absolutely loved spending some more time in the kitchen, and these Chocolate and Cranberry energy balls are the results of just that! I had the privilege of spending some time with Elena, from As Easy As Apple Pie, and this is what we created!

Chocolate and Cranberry Energy Balls

These nut free energy balls use just 7 ingredients, and taste divine. What’s more, they provide a healthy dose of Omega 3 fatty acids in the form of ground flaxseeds, as well as mood boosting dark chocolate, and protein packed pumpkin seeds.

To show you just how easy it is, I’ve made a short video to take you through the no bake, energy ball creation process!

 

Ingredients:

1 Tbs Coconut Oil

1/2 Cup Ground Flaxseeds

1/4 Cup Cacao Powder

1/4 Cup Dark Chocolate (we used Bare Chocolates 55% Dark)

1/4 Cup Dried Cranberries

1 Cup Dates

1/2 Cup mixed seeds  (we used 1/4 cup pumpkin and 1/4 cup sunflower)

Method:

To make these delicious cranberry and chocolate energy balls, first blend the seeds together until they are slightly broken up.

Next, add the flaxseeds, chocolate (if you’ve already chopped it into small pieces) and cranberries, and blend.

Finally, add the dates, followed by the coconut oil.

And that’s all it tastes to create the delicious energy ball mixture. Have fun rolling them into balls, whilst trying not to eat the mixture as you go!
