In honour of National Veggie Week in the UK I have been attempting to up my veggie intake, and decrease my reliance on meat for my protein.
And it’s actually easy, and tasty!
I’m sharing with you today my new favourite post workout snack, as it is a thumbs up for protein, and it tastes amazing. And if I can make it, you can too!
Carrot and sun dried tomato hummus
1 x can chickpeas
2 x carrots
2 x tablespoons sun dried tomatoes
1 x tablespoon Tamari
1 x juice of lemon
Dash of rosemary
Dash of salt
Dash of crushed chilli pepper
2 cloves of garlic
I’m lazy and short of time, so I didn’t even peel the carrots. I washed them, cut them up and roasted them with some oil for 30 minutes. For the last 5 minutes I added the garlic cloves.
Whilst the carrots were in the oven I blitzed everything else in the blender, then added the carrots and garlic.
So quick and easy, and so tasty either on oat cakes, celery, or mixed in with your salad.
